Fall is here! One of my favorite baking seasons, of course, why? EVERYTHING APPLE! This year we went apple picking a little earlier than usual. So let the baking begin! These apple crumble muffin are simply delicious, yes there is a lot of steps to this recipe but, let me tell you it is SOOOOOO worth it!
Ingredients
- Crumble
- 1/3 cup of brown sugar
- 1 tbsp of sugar
- 2/3 cup of flour
- 1 tsp of cinnamon
- 4 tbsp of butter (salted) if you don’t have salted add a pinch of sauce
- 1/2 cup of oats (optional)
- Apple Pie Filling
- 2 cups of apples peeled and chopped into small pieces
- 2 tbsp of butter
- 1/4 cup of brown sugar
- 1 1/2 tsp of cornstarch
- 2 tsp of cinnamon
- Apple muffin mix
- 2 cups of flour
- 2 tsp of baking powder
- 2 tsp of cinnamon
- 1/2 tsp of salt
- 1/2 cup of melted butter
- 1/2 cup of brown sugar
- 1/3 cup of granulated sugar
- 2 eggs
- 2 tsp of vanilla
- 1/2 cup of milk
- 1 1/2 cups of apples chopped and peeled
Instructions
- CRUMBLE Start by making your apple crumble mix all the ingredients together. Brown sugar, granulated sugar, flour, cinnamon, oats and butter (room temperture and cut into small cubes.
- Mix all together with your hands to get a nice thick texture.
- APPLE PIE FILLING In a sauce pan mix together your apples peeled, butter, brown sugar cornstarch and cinnamon.
- Cook on low medium heat until well combined and the apple become a little mushy. Don’t not over cook.
- MUFFIN MIX in a mixer, mix together, your flour, baking powder, cinnamon, salt, melted butter, brown sugar, granulated sugar, eggs, vanilla and milk. Mix until well combined.
- Then fold in your apples.
- Preheat your oven to 425F
- line your muffin tin
- Scoop the batter into eat muffin tin.
- then add a layer of your apple pie filling.
- Top it off with your crumble.
- Bake for 5 minutes at 425F
- Then lower your oven to 350F and cook for an additional 25 minutes.
