  • 3 Eggs
  • 1 Cup of sugar
  • Zest of 1 lemon
  • 1/2 Cup of lemon juice
  • Pinch of salt
  • 1 tsp of Cornstarch
  • 4tbs of butter


  1. In a pot add lemon juice, sugar, eggs, and zest.
  2. Turn the heat to medium.
  3. Let dissolve while constantly stirring.
  4. Add in a pinch of salt and cornstarch.
  5. Keep stirring until the texture is thick like jelly. This may take up to 10 minutes so just keep stirring.
  6. Once the consistency is thick.
  7. Make sure to pass curd through a strainer so that any pieces of lemon zest remaining don’t leave a grainy texture.
  8. Once all strained, while still hot add in 4 tbsps of butter stir till completely melted.
