
Ingredients
- 3 Eggs
- 1 Cup of sugar
- Zest of 1 lemon
- 1/2 Cup of lemon juice
- Pinch of salt
- 1 tsp of Cornstarch
- 4tbs of butter
Instructions
- In a pot add lemon juice, sugar, eggs, and zest.
- Turn the heat to medium.
- Let dissolve while constantly stirring.
- Add in a pinch of salt and cornstarch.
- Keep stirring until the texture is thick like jelly. This may take up to 10 minutes so just keep stirring.
- Once the consistency is thick.
- Make sure to pass curd through a strainer so that any pieces of lemon zest remaining don’t leave a grainy texture.
- Once all strained, while still hot add in 4 tbsps of butter stir till completely melted.
