Ingredients
- 2 cups (200 g) quick oats
- 1 cup milk
- 1/2 cup pure maple syrup
- 1/3 cup oil
- 2/3 cup (135 g) light brown sugar
- 2 large eggs
- 1 1/2 cups (210 g) flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
Preparation note: The ingredient list and baking temperature/time were supplied with the recipe. This method is reconstructed from those ingredients using a standard muffin-making approach; it is not the original method and has not been kitchen-tested. Yield was not provided.
- Preheat the oven to 400°F (205°C). Line standard muffin tins with paper liners or grease the cups lightly. Have a second tin ready if needed.
- Combine the quick oats and milk in a large bowl. Let stand for about 10 minutes to soften the oats.
- Whisk the maple syrup, oil, brown sugar and eggs together in a separate bowl until well combined. Stir into the soaked oats.
- In another bowl, whisk together the flour, baking powder, cinnamon, baking soda and salt.
- Add the dry ingredients to the oat mixture. Fold gently just until no dry flour remains. Avoid overmixing.
- Divide the batter among the prepared muffin cups, filling each about three-quarters full.
- Bake for 18–25 minutes, checking at 18 minutes. The muffins are ready when the tops spring back lightly and a toothpick inserted into the centre comes out clean or with a few moist crumbs, with no wet batter.
- Let cool in the tin for about 5 minutes, then transfer to a wire rack. Serve warm or let cool completely.
Notes
Use quick oats as listed. Fold gently once the flour is added. Begin checking at 18 minutes, and cool completely before packing away. The original yield and preparation time were not supplied.
