Another great recipe for toddlers to eat. Zucchini, Carrot, and Potato patties are fast and easy to make but also delicious.

Ingredients

  • 1 Zucchini
  • 1 Carrot
  • 1 Potato or already hashed frozen potatoes
  • 1 Egg
  • Salt and Pepper and Parsley

Instructions

  1. Prepare a pan of oil for frying. Preheat to low/med heat.
  2. Start to cut your zucchini, carrot, and potato if you don’t have the hashed ones
  3. Take a cheese grater and grate your zucchini, carrot, and potato in a bowl.
  4. Add in egg and mix together
  5. Add some salt, pepper, and parsley to taste. You can also add garlic powder if you like.
  6. Form with your hand’s mini patties.
  7. Place patties in the pan for frying.
  8. Let them fry till browned and then flip.
  9. Prepare a plate with a Scott Towel.
  10. Once nice and brown take out patties and place them on a plate with a Scott towel to absorb any access oil.

Notes

You can also add some parmesan cheese if you like. If you do not want to fry this recipe. Preheat your oven to 350. Place your mixture in a Corningware flatten it nicely place a cover or aluminum foil on top and bake for 20 minutes. Check after 20 minutes if the potatoes are not cooked keep for another 10 minutes. To make it a bit crispy remove cover or aluminum foil and broil for 2-3 minutes.
