Arancini (Rice Balls)

Ingredients

  • 2 Cups of Abrobrio white rice
  • 1/2 cup of parmesan cheese
  • 1/2 cup of mozzarella
  • 1/2 cup of Italian seasoned breadcrumbs

Instructions

  1. In a pot boil water, add salt.
  2. Once water is boiling add rice.
  3. Let cook till well done.
  4. strain and let cool enough so you can mix it with your hands.
  5. In a bowl add cheeses.
  6. Add in cooked rice and mix
  7. Prepare a frying pan with oil or a baking sheet with parchment paper (preheat oven to 375)
  8. Roll into balls.
  9. Roll the rice ball in breadcrumbs.

These are super simple Arancini’s (riceballs) you can also add sauce, peas, and a piece of cheese inside. As you are rolling into balls make a hole in the center of the arancini and add a small scoop of tomato sauce, boiled peas, and or a cube of cheese. This is all optional.

I like my arancini’s super simple.

Notes

Serve on a bed of sauce under and on top and sprinkle a bit of parmesan cheese and ENJOY!
