Ingredients
- 2 Cups of Abrobrio white rice
- 1/2 cup of parmesan cheese
- 1/2 cup of mozzarella
- 1/2 cup of Italian seasoned breadcrumbs
Instructions
- In a pot boil water, add salt.
- Once water is boiling add rice.
- Let cook till well done.
- strain and let cool enough so you can mix it with your hands.
- In a bowl add cheeses.
- Add in cooked rice and mix
- Prepare a frying pan with oil or a baking sheet with parchment paper (preheat oven to 375)
- Roll into balls.
- Roll the rice ball in breadcrumbs.
These are super simple Arancini’s (riceballs) you can also add sauce, peas, and a piece of cheese inside. As you are rolling into balls make a hole in the center of the arancini and add a small scoop of tomato sauce, boiled peas, and or a cube of cheese. This is all optional.
I like my arancini’s super simple.

Serve on a bed of sauce under and on top and sprinkle a bit of parmesan cheese and ENJOY!
