My favorite pasta has to be homemade Gnocchi. Yes, it is one of the heavier kinds of pasta to digest but YUM, it is just delicious! It is a great pasta to keep in your freezer or make it fresh if you are having guests over.

I make my gnocchi’s with potatoes but you can also make it with ricotta cheese if you prefer.

Potato Gnocchi

Ingredients

  • 4 cups all Purpose Flour
  • 6 big potatoes
  • 1 egg

Instructions

 

  1. Start by peeling and boiling your potatoes (add salt to the water).
  2. Prepare mixer.
  3. After your potatoes are cooked, let cool, mashed them, and set them aside.
  4. In your mixer add cooled mashed potatoes and mix on low speed.
  5. Add egg while your mixer is still on.
  6. Add one cup of flour at a time.
  7. Knead until a dough ball is made.
  8. Remove dough from the mixer.
  9. Place on a floured surface.
  10. Neat till the dough is nice and soft.
  11. Cut small pieces of dough balls. One at a time.
  12. Roll out, like a snake.
  13. Use a dough cutter, cut small rectangles
  14. Then use a fork to roll the dough to give it that grove in the gnoochi. Or you can use your finger.
  15. Place on a baking tray. Once the tray is full put in the freezer for 5-10 minutes to make the dough hard in order the freeze in baggies.
