I hate bananas, I am not sure if it is because of the penicillin medication (banana flavour) when i was young that scarred me but I really do not like them but i ever so often try incase my tastebuds change.

I made these muffins for my toddler and he loves them. Not only does it help you not waste your extra ripe banana’s but they are honestly the fluffiest and moist banana muffin I have ever eaten, and the best part is the banana flavour is over powerful like some recipes and I know because even I eat them.

Fluffy Banana Muffins

Ingredients

  • 1 cup of butter or margarine
  • 1 cup of sugar
  • 2 Eggs
  • 1 Tsp of baking soda
  • 4 Tbsp of hot water
  • 1 Cup of bananas mashed
  • 2 Cups of flour
  • 2 Tsp of baking powder
  • Pinch of Salt
  • 1 Cup of nuts optional
  • 1 Tsp of vanilla

Instructions

  1. Preheat your oven to 350 degrees and prepare your muffin tins.
  2. Start by mashing your bananas in a bowl and adding the 4 Tbsp of water. Mix until well combined. Set aside
  3. In your mixer add the remaining ingredients, Eggs, Baking soda, Baking powder, flour, salt and vanilla. add nuts if you like, I recommend pecans or walnuts.
  4. Mix until well combined. Then add your banana mixture.
  5. Mix some more until well combined and there are no chunks of banana remaining.
  6. With an ice-cream scooper, scoop one scoop of mix into each tin.
  7. Place tin, in oven for 18-22 minutes. Check after 18 minutes
  8. Let Cool. ENJOY!
