Potato donuts are super underrated! They are so so good! The process is a bit long but the outcome is always delicious! This recipe is an old recipe but simple. You must try these amazing donuts and hopefully you enjoy them as much as my whole family does.

Potato Donuts

Ingredients

  • 2 cups of potatoes peeled and cooked.
  • 2 cups of sugar.
  • 1 cup of milk
  • 2 tbsps of melted butter
  • 3 tsp of vanilla
  • 4 cups of flour
  • 5 tsps. baking powder.

Instructions

  1. Start by mixing all your liquid ingredients together Sugar, vanilla, milk, and butter.
  2. Add in you cooked and peeled potatoes.
  3. Let it sit for 30 minutes.
  4. After the 30 minutes add in the flour and baking powder, mix until it makes a soft round dough.
  5. Cover and put back in the fridge to chill for 1-2 hours.
  6. While your dough is chilling prepare your trays and pot of oil.
  7. In a pot add about half oil, enough for your donuts to float when cooking.
  8. Start to heat up your oil on medium heat.
  9. Take your dough out from the fridge. On your counter add flour and start by cutting your dough in 4.

  10. WITH NO HOLE IN THE MIDDLE
  11. Roll out your dough about medium thickness and use a donut cutter to make your donuts. If you do not have a donut cutter you can us a cup, the size desired for your doughs and a smaller cup preferable a shot glass cup to make the hole for the inside. Again, this is all up to you. You can even leave them without a hole in the middle.
  12. I Like to cut out all my donuts before frying but you can fry as you go.
  13. Before putting your donuts to fry, test the heat of your oil by dropping a small piece of dough and making sure it floats right away but doesn’t burn.
  14. Start by frying your donuts 3-4 minutes on each side until they turn golden brown.
  15. Place them on a drying rack so the oil can drip or on a tray lined with parchment paper.
  16. Repeat the process. Till all donuts are done.

Notes

While donuts are still warm you can season them with icing sugar or roll them in sugar and cinnamon. Depends on the toppings you like. Do know that potato donuts are delicious plain and also heavier than a regular donut.
