You will never know what it is like to cook 100 different meals until your toddler decides it is time to be picky. My son has always been a great eater, and meat lover until…now! So while he is in the stage of “I just want to eat potatoes” I have been trying to find different kinds of recipes so he can still get all the nutrients he needs. My solution and it has been working so far SOUP!

Here is a fast and easy vegetable soup that anyone can enjoy, maybe even your picky toddler 😉

Easy Vegetable Soup

Ingredients

  • 1 Can of sauce
  • Water
  • 1/4 bag of frozen veggies
  • 1 full Onion
  • 2-3 Carrot
  • 2-3 potatoes of choice
  • 1 tbsp margarine or butter

Instructions

  1. Get a pot ready
  2. Add 1 Tbsp of Margarine or Butter place on stove
  3. Cut up 1 full onion into pieces, 2-3 carrots, 2-3 potatoes and add a 1/4 bag of frozen vegetables ( I used mixed veggies NO BROCCOLI NO CAULIFLOWER, since they are very strong tasted veggie’s if you put it the soup will only taste like that)
  4. Turn stove top on to med/high and let simmer
  5. Once the margarine or butter and veggies have simmered together, fill your pot half with water.
  6. Open your sauce jar  I used homemade sauce, add half a jar of tomato sauce.
  7. Salt, Pepper
  8. Turn the stove top to low heat, and let cook for 1-1.5 hours until potatoes and veggies are fully cooked.
  9.  Once everything is fully cooked set aside and let cool.
  10. Blend everything together and serve.  You don’t really need to blend it, I do for my toddler since he is a picky eater, and he only likes it blended.
