Is your toddler not eating as many fruits and vegetables as you would hope for? These muffin contain both fruits and vegetables and are super healthy for your little one, with no added sugars. Both me and my little one loved them. The muffin itself is a bit more moist than normal textured muffins but that is because of all the fruits and vegetables.

Ingredients
- 1 cup flour
- 1/2 cup rolled oats
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1 large carrot
- 1/2 cup grated zucchini
- 1/2 cup grated apple
- 1/4 cup oil
- 2 mashed bananas
- 1/4 cup baby applesauce
Instructions
- Preheat your oven to 350 degrees Fahrenheit and grease a 12-cup tin.
- Add flour, baking soda and salt to a large bowl.
- Add rolled oatsĀ I passed them through my food processor to make it less chunky.
- Add the eggs, oil, carrot, zucchini, apple, and apple sauce
- Mash both bananas I mashed mine in my food processor to make sure it was like puree and there were not chunks.
- Mix everything together with a rubber spatula to make sure everything is well integrated.
- Add muffin batter to tin cups and bake at 350 for 35 minutes.
