Whether you are feeling under the weather, or just trying to keep warm, making a fresh homemade soup can provide you with all the vitamins you need.

 

Homemade Chicken Broth

Ingredients

  • 2-3 pieces Chicken breast/breast and thigh/ Legs (4-5)
  • 2-3 carrots peeled
  • 1 onion whole (supplement: you can use leek white part only 2-3 pieces)
  • 2-3 celery with leaves (middle part-whole)
  • 2 potatoes peeled whole
  • 1 tomato cut in half
  • oil
  • salt

Instructions

  1. Fill a pot of water (3/4 full)
  2. Add chicken, bring to boil.
  3. While you wait for the chicken to boil, cup up all your vegetables. celery, carrots, onion, potatoes, and tomato
  4. Take out with a small strainer all the fat that accumulates at the top.
  5. Add in all vegetables, oil, and salt.
  6. bring to boil again. Once it starts to boil turn burner heat on low 2/3, let cook for 2 hours.
  7. Turn from time to time.

Once your chicken broth is ready you have a choice to either clean all the chicken break up all the vegetables and mix them to make a chicken soup or you can strain it till there is only the broth left.

What can you do if you just want the broth but don’t want to throw out all the vegetables in the soup?
  • You can clean the chicken and pull it into small pieces. On a plate put the pulled chicken, in a bowl add olive oil, salt, lemon juice, and fresh-pressed garlic mix together and pour on top of your chicken (you can add as much as you like to your own taste). Garnish with parsley.
  • As a side to your broth or soup cut up the potatoes and carrots on a plate and serve, plain and simple. You can also mash both the potato and carrots together add a bit of salt and serve.
  • As for the tomato and celery, you can also cut them up but I usually throw them away.

This broth can be used for the broth in my other recipes such as Leek Soup, and Cresty Soup. I highly recommend homemade broth when making those soups the taste is totally different than just using premade chicken stalk.

Here are a few soups you can make using this broth. Stracciatella soup, Tortellini soup, Pasta Bene soup, Pastina, Leek and Cresty Soup.
