For those of you who like lasagna, you will love this homemade recipe to make your very own. Yes, there is a lot of steps to make homemade lasagna but once you try it, you will never go back! This recipe is how to make the lasagna dough in your kitchen mixer with the pasta adapter for your mixer machine or table machine by hand.

You can always knead the dough by hand and pass it through the table machine if you don’t have an electric mixer.

Homemade Lasagna dough

Ingredients

  • 4 cup flour
  • pinch of salt
  • water as needed
  • 3-4 cups grated mozzarella cheese (This is for assembling the lasagna)
  • 3-4 cups parmesan cheese (This is for assembling the lasagna)
  • 1 pot Meat sauce (See below for my meat sauce recipe)

Instructions

  1. In a mixer add one cup of flour and egg at a time.
  2. Mix until all ingredients are combined.
  3. Once combined, place on a wooden cutting board (floured) and knead for another 5-10 minutes.
  4. On a table add a table cloth and sprinkle flour on top.
  5. Get your pasta maker ready.
  6. Cut dough into small pieces and pass through the pasta maker several times till SUPER thin. The trick to making an amazing lasagna is to have your dough layers very thin.
  7. Place lasagna dough on table cloth. Repeat the process till all your dough is finished. Do not overlap your lasagna dough.
  8. Preparing your lasagna pot: Use a rectangle Corningware pot that is pretty deep in depth.
  9. Make sure your meat sauce and cheese are well prepared before assembly. Put cheese in two separate bowls and set aside. (Click here for my meat sauce recipe)
  10. Start by adding sauce to the bottom of your pan. You can now start to assemble your lasagna. Place layer of lasagna dough, cover all the pan, add sauce, then grated cheese (mozzarella) and a bit of parmesan.
  11. Repeat step 10 till the pot is full, leaving about 1 inch from the top of the pan.
  12. Make sure your last layer is full of cheese.
  13. preheat oven to 350 Celcius.
  14. Cover the top of the pan with aluminum foil. Cook for 45minutes to an hour.

 

Notes

Meat Sauce recipe

ADD EGGPLANT
Don’t like meat or just want to try something different. You can add eggplants to the layers of your lasagna. This is not indicated in the recipe above. To add eggplant to the recipe you would preheat your oven to 350 celsius. Place whole eggplants on a tray and bake for 30 min or so. Once cool, you will peel the eggplant to remove the skin (purple part). Then gently slice your eggplant into thin slices.  Make sure to dry your eggplant because they produce a lot of water. You then add your eggplant slices to your layers as you go.
