Sweet Potato & Carrot Soup

My toddler has recently started to love soup, after trying out different recipes I came up with this super simple sweet potato and carrot soup and he just loved it.

I served this recipe with small pieces of bread inside so he can grab it with his fingers. (toddlers just want to eat everything with their hands.)

Sweet Potato Carrot Soup

Ingredients

  • 3-4 large carrots
  • 1 large onion
  • 1 larger sweet potatoes
  • 1 tsp parsley
  • salt and pepper to taste

Instructions

  1. In a pot add water 3/4 full.
  2. Add all ingredients, carrots, onion, and sweet potato.
  3. Cover and bring to boil.
  4. Once the soup starts to boil add parsley and salt and pepper to taste.
  5. Lower soup temperature to low and leave on for about 30minutes (until vegetables are fully cooked)
  6. Once fully cooked, blend everything all together until creamy and smooth.

Notes

You can add noodles or barley to this soup if you choose.
