Have you started making food for your toddler? Well, let’s just say when you find something they love the endless recipes to change it up are something you will be needing to know. My son is obsessed with Zucchini, although I feel like making it the same way over and over again gets boring and also he cannot have the same thing every day.
So I tried many different zucchini recipes and I have come up with my 3 favorite recipes that can either be baked or fried so which also gives you more options for tastes. Also, you can add different veggies inside to trick them to eat more than just zucchini.
- Zucchini Fritters
- Zucchini Galettes
- Zucchini, Carrot, potato patties

Ingredients
- 1 Full Zucchini
- 1 Egg
- 1 Cup of Italian bread crumbs (already seasoned)
Instructions
- Wash and cut zucchini into thin slices either long or round. You can keep the skin on or peel it off.
- Put cut Zucchini in a bowl.
- Add egg.
- Mix together.
- Prepare a frying pan with the oil of choice. Heat up low/med heat.
- In another bowl or plate, pour breadcrumbs.
- Roll Zucchini into the bread crumbs.
- Once the oil is at a decent temperature add in zucchini pieces one at a time.
- Make sure the oil is not too hot or else your zucchini will burn and not cook.
- Prepare a plate with a Scott towel, for when you have to remove the zucchini fritters.
- Turn zucchini a few times till golden brown.
- Remove from oil and place on your plate with a Scott towel to absorb any access oil.

Notes
If you do not want to fry them you can also bake them. Once your zucchini is rolled in breadcrumbs place them on a baking sheet make sure they are well separated and preheat your oven to 375 degrees. Cook for about 20 minutes. Check and turn after 10 minutes. Keep in longer if you want them more crispy.
