This classic italian cookie is delicious. If you have never tried them, you need to! This is something that my nonna always had in the house as snacks, and they never really lasted very long when us grandkids used to visit. yes you do need a special machine to make them, but you can find it online or at any italian store that sells appliances. They store great in brown paper bags if sealed properly for a long time and they will always taste fresh and crispy. There are a lot of different ways to make pizzelles but the recipe you will find here is my nonna’s original recipe. ENJOY!

 

Pizzelle

Ingredients

  • 6 Eggs
  • 1 Tbsp of sugar per egg
  • 1 Tbsp of oil per egg
  • 6 Tbsp of flour
  • 1 lemon zest

Instructions

  1. In a bowl mix together eggs, sugar, oil and lemon zest.
  2. Add 1 tbsp of flour at a time until consistency is a little bit more liquid than pudding see my instagram video if needed
  3. Prepare your work station with your pizzelle maker.
  4. A small bowl of oil and Scott towel.
  5. An area to place your hot pizzelles and spatula to remove them off the machine once cooked.
  6. Brush your pizzelle maker with oil to make sure your pizzelles don’t stick ( I usually use a sheet of scott towel and just pass over quickly, I do this every few pizzelles to make sure that it does not stick).
  7. Place, 3/4 of a tbsp of mixture on each side of your pizzelle maker, close and cook. ( you can add more or less, depending the size you make your pizzelles, but make sure it does not overflow).
  8. Leave in the machine till desired crispiness.
  9. Repeat possess until you have no more mixture left.

Notes

You can reduce the amount of pizzelles you make by eliminating eggs but be sure to also remove 1 tbsp of sugar and 1 tbsp of oil. You can also make more by adding eggs and also adding 1 tbsp of sugar and 1 tbsp of oil. If you double the recipe add another lemon zest. You can also replace your lemon zest with 1 tsp of vanilla if you like it better.
