Cresty soup is another one of my favorite soups of all time. Not only does it taste great, but it is also so simple to make. You can easily make this soup and freeze it to keep for about 2-3 months.

Creamy Cresty Soup

Ingredients
- 3-4 large carrots
- 2 1/2 tbsp butter
- 1 large onion
- 4 large potatoes
- 6 cups chicken broth (see homemade chicken broth recipe)
- 1/4 tsp thyme
- 1 bay leaf
- 1/2 tsp basil
- 1/2 tbsp parsley
- salt and pepper to taste
Instructions
Before starting, the best and most recommended chicken broth to use is homemade chicken broth. If you didn’t have time to make homemade chicken broth, you can use Campbell’s chicken broth or chicken stock powder (4 tbsps) or cubes (4 cubes) be careful because they are salty. Please note that although these broths are faster to use the taste of the soup will be completely different.
- Cut up carrots, onions, and potatoes in circles.
- Using a wok or deep frying pan melt the butter on low heat. Once the butter is starting to melt add cut-up carrots, onion, and potatoes to the pan.
- Raise the heat to low/medium and cook for about 15minutes or until carrots and onions are have softened.
- In a saucepot, add chicken broth the best broth to use is homemade chicken broth, if you didn’t have time to make homemade chicken broth, you can use Campbell’s chicken broth but the taste will be completely different or you can also use the chicken stock powder (4 tbsps) or cubes (4 cubes) be careful because they are salty. Bring the chicken broth to a boil.
- Add in cooked carrots, onions, and potatoes.
- Add in thyme, bay leaf, basil, and parsley. Also, add salt and pepper to taste.
- Cook on low heat for 1hr.
- Once your hour is up. In a food processor or hand blender, blend the soup to a silky smooth texture.
