Let’s TACO bout it Tuesday’s: Breakfast edition

I love Taco’s any day of the week. The best part about tacos is you can eat it so many different ways and never get tired of it. (Well I don’t) I have tried so many different taco recipes and added a few twists of my own and I just love them all. Here are a few recipes that I have tweaked and rejigged to give it my own little something.

BREAKFAST TACOS
Yes breakfast tacos exist and yes, they are delicious!

THE EGGXTRAVAGANZA TACO

  • 1 cup of olive oil
  • 1/2 a cup of homemade Pico de Gallo  find my pico de gallo recipe here
  • 6 eggs
  • 1/2 cup of crushed tortilla chips
  • 1/2 cup of shredded cheese
  • tortillas, store bought or homemade warming them up is recommended
  • 1 avocado pitted peeled and thinly sliced

In a large pan on medium heat add your oil and pico de gallo and let heat up for about 5 minutes (do not make it cook). Add in your beaten eggs and cook. Make sure to scramble your eggs so they stay nice and fluffy. And Lastly, close the heat but leave the pan on the burner and add in your crushed tortilla chips, shredded cheese mix until melted. DONE! Divide your egg mixture on your tortillas add a few slices of avocado and serve.

THE BACON AND EGG TACO

  • 2 tbsp of olive oil
  • 6 eggs
  • 1/2 cup of shredded cheese
  • 4-8 slices of bacon, cooked and chopped into pieces
  • tortillas, store bought or homemade warming them up is recommended
  • 1 avocado pitted peeled and thinly sliced
  • 1 shallot chopped into small pieces

In a large pan on medium heat add your oil and your beaten eggs and cook. Make sure to scramble your eggs so they stay nice and fluffy. And Lastly, close the heat and add in your shredded cheese, mix until melted. DONE! Divide your egg mixture on your warmed tortillas add a few slices of avocado and serve.

THE BREAKFasT SAUSAGE TACO

  • 1 tbsp of olive oil
  • 1/2 a cup of homemade Pico de Gallo  find my pico de gallo recipe here
  • 6 eggs
  • 4-5 breakfast sausages
  • 1/2 cup of shredded cheese
  • tortillas, store bought or homemade warming them up is recommended
  • 1 avocado pitted peeled and thinly sliced
  • Salt and Pepper to taste

In a large pan on medium heat add your oil and pico de gallo and let heat up for about 5 minutes (do not make it cook). Add in your beaten eggs and salt and pepper to taste and cook. Make sure to scramble your eggs so they stay nice and fluffy. Close the heat but leave the pan on the burner and add in shredded cheese mix until melted. In a separate pan cook your sausage make sure to cut up your sausage into small pieces. Once cooked add into egg mixture and mix it all together. Divide your egg mixture on your tortillas add a few slices of avocado and serve.
