Another fun recipe for your toddler to enjoy. These muffin bites are great for breakfast or even an afternoon snack for your little one. You can even make these into mini muffins if you like. Just make sure to reduce the cook time in the oven.

Ingredients

  • 3 Eggs
  • 4 slices of bacon
  • hand full of spinach or Broccoli
  • 1/2 cup of mozzarella cheese

Instructions

  1. Start by cooking the bacon.
  2. Prepare muffin cups with or without muffin liners if you don’t have muffin liners add cooking spray to the tin.
  3. Preheat oven to 350
  4. In a bowl mix  together eggs, bacon (cut bacon into small pieces), spinach or broccoli (cut broccoli into small pieces), and mozzarella cheese until well combined.
  5. Pour mixture into each tin filling it about half full.
  6. Bake for 30 minutes or until the egg is fully cooked.
