Another loaf favorite. A great way to hide some vegetables for the kids and they wont even know.

Zucchini Chocolate Chip Loaf

Ingredients

  • 3 cups of flour
  • 1 tsp of baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 cups of grated zucchini or carrots
  • 1 cup of oil
  • 1 tsp of salt
  • 2 cups of sugar
  • 2 eggs
  • 1 cup of mini chocolate chips semi sweet or milk

Instructions

  1. Preheat your oven to 350 degrees F.
  2. With some butter grease 2 rectangle pans 8×4 or 9×5. (loaf size)
  3. Using a mixer, mix together baking powder, baking soda, cinnamon, eggs, salt, oil, and sugar.
  4. Add one cup of flour at a time. mix between cups.
  5. Add shredded zucchini or carrots
  6. Add mini chocolate chips semi sweet or milk, mix well.
  7. Once everything is mixed well together, add into your pans half and half.
  8. Cook for 40-55 minutes. Check with a toothpick to see if the inside is cooked.

Notes

Depending your oven the cook time varies, start looking at around 40 minutes and add 5-10 minutes as you go. My oven takes 52 minutes.
