Another loaf favorite. A great way to hide some vegetables for the kids and they wont even know.
Ingredients
- 3 cups of flour
- 1 tsp of baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 2 cups of grated zucchini or carrots
- 1 cup of oil
- 1 tsp of salt
- 2 cups of sugar
- 2 eggs
- 1 cup of mini chocolate chips semi sweet or milk
Instructions
- Preheat your oven to 350 degrees F.
- With some butter grease 2 rectangle pans 8×4 or 9×5. (loaf size)
- Using a mixer, mix together baking powder, baking soda, cinnamon, eggs, salt, oil, and sugar.
- Add one cup of flour at a time. mix between cups.
- Add shredded zucchini or carrots
- Add mini chocolate chips semi sweet or milk, mix well.
- Once everything is mixed well together, add into your pans half and half.
- Cook for 40-55 minutes. Check with a toothpick to see if the inside is cooked.
Notes
Depending your oven the cook time varies, start looking at around 40 minutes and add 5-10 minutes as you go. My oven takes 52 minutes.
