I was on the search for a mini muffin base that would taste good with any ingredient you’d add to it. I just couldn’t find the right base to make my different flavors muffins. After trying and tweaking different recipes I have put together the perfect muffin base recipe for any kind of flavor mini muffin.

I was inspired to find this recipe this year because I always make assorted cupcakes for my son’s birthdays but this year I have decided that I should change it up, so I wanted to make assorted mini muffins, which turned out great and everyone loved them.

Here are the flavors I tried with the same base recipe:

  • Chocolate Chip
  • Banana This is the only one that is a completely different recipe 
  • Toffee bites
  • Butterscotch
  • blueberry
  • lemon
  • cinnamon

Mini Muffin Base Recipe

Ingredients

  • 1 Egg
  • 1 cup of milk
  • 3 tsp of vanilla extract
  • 1/3 cup of vegetable oil
  • 1/2 cup of sugar
  • 1/2 cup of brown sugar
  • 2 cups of all purpose flour
  • 1 Tbsp of baking powder
  • 1 Tsp of salt
  • 1 1/4 cup of flavoured ingredients of your choice

Instructions

  1. Preheat your oven to 375 degrees.
  2. Prepare your mini muffin tins by spraying it with cooking spray or add mini cupcake liners.
  3. In a mixer, mix together your wet ingredients, egg, milk, oil and vanilla extract.
  4. Add in your sugar, brown sugar, baking powder, salt and flour.
  5. Mix until well combined.
  6. Now here is where things get exciting, you can now add your flavouring. Such as Chocolate Chips, Toffee bites, butterscotch, blueberries etc…
  7. Add 1 cup of your choice of flavor. (set aside the remaining 1/4 cup) If you are making cinnamon mini muffins add 2 Tbsp of cinnamon to your batter, and if you are making lemon mini muffins add one zest of a lemon to your batter.
  8. Mix together until well combined, but do not over mix.
  9. With a mini scooper or spoon fill each muffin tin 2/3 full.
  10. Bake for 10-12 minutes.
  11. Once they are done, remove them from the oven, let cool just a bit and sprinkle remaining 1/4 cup of your topping of choice on top of every muffin.

Notes

If you feel that you want to make more than one flavour with one batch you can. Split the batter in two. If that is the case instead of adding 1 cup of your choice of flavouring add 1/2 a cup to the split batter and keep the 1/4 cup for sprinkling. (Except for lemon and cinnamon, see instructions above)
