Quick cold side salads

Sometimes having a cold side salad is just the right thing for your meal and doesn’t have to be complicated. Here are some of my simple cold side salads.

CORN SALAD

  • one can of corn ( washed)
  • one full pepper thinly cut
  • half a cucumber thinly cut
  • 1 shallot chopped or 1/4 of an onion thinly sliced
  • one celery stick thinly sliced

I like to keep my dressing simple. Drizzle with olive oil add salt and pepper to tastes a bit of parsley and if you like garlic you can add some garlic powder or fresh garlic.

COUSCOUS SALAD

  • Two cups of couscous (cooked)
  • One full cucumber cut into pieces
  • 2 shallots thinly sliced
  • Celery 2 sticks thinly sliced
  • One full pepper thinly cut
  • you can add a can of your favorite beans, or a can of corn if you like

For the dressing again, I like to keep it simple. Salt and pepper to taste, drizzle of olive oil. I like to add a tablespoon of honey or maple syrup, parsley and garlic.

PASTA SALAD

  • cooked pasta of your choice (I like to use tortellini, elbows or even Penne)
  • once cooked, let cool.
  • Add mayo one TBSP at a time you don’t want to put to much.
  • Salt and pepper to taste.
  • Onions cut up, add to taste
  • Celery 2 thinly cut
  • Serve cold.

QUINOA SALAD

  • 2 cups cold cooked quinoa
  • 1 cup chopped cucumber
  • 1 avocado pitted, peeled, and chopped
  • 1 cup halved grape or cherry tomatoes
  • 2 cups fresh spinach leaves chopped
  • 2 green onions sliced

For the dressing, add one cup of olive oil, one minced garlic, 1 tbsp. of lemon juice, 1 tsp of maple syrup and salt and pepper to taste. Mix all together, and add to your salad.
