Sometimes having a cold side salad is just the right thing for your meal and doesn’t have to be complicated. Here are some of my simple cold side salads.
CORN SALAD
- one can of corn ( washed)
- one full pepper thinly cut
- half a cucumber thinly cut
- 1 shallot chopped or 1/4 of an onion thinly sliced
- one celery stick thinly sliced
I like to keep my dressing simple. Drizzle with olive oil add salt and pepper to tastes a bit of parsley and if you like garlic you can add some garlic powder or fresh garlic.
COUSCOUS SALAD
- Two cups of couscous (cooked)
- One full cucumber cut into pieces
- 2 shallots thinly sliced
- Celery 2 sticks thinly sliced
- One full pepper thinly cut
- you can add a can of your favorite beans, or a can of corn if you like
For the dressing again, I like to keep it simple. Salt and pepper to taste, drizzle of olive oil. I like to add a tablespoon of honey or maple syrup, parsley and garlic.
PASTA SALAD
- cooked pasta of your choice (I like to use tortellini, elbows or even Penne)
- once cooked, let cool.
- Add mayo one TBSP at a time you don’t want to put to much.
- Salt and pepper to taste.
- Onions cut up, add to taste
- Celery 2 thinly cut
- Serve cold.
QUINOA SALAD
- 2 cups cold cooked quinoa
- 1 cup chopped cucumber
- 1 avocado pitted, peeled, and chopped
- 1 cup halved grape or cherry tomatoes
- 2 cups fresh spinach leaves chopped
- 2 green onions sliced
For the dressing, add one cup of olive oil, one minced garlic, 1 tbsp. of lemon juice, 1 tsp of maple syrup and salt and pepper to taste. Mix all together, and add to your salad.
