After searching for different side dishes I decided that it was time to make my own version of potato wedges, and the recipe turned out great. Simple, fast and delicious.

Ingredients

  • 4 to 5 potatoes
  • Garlic powder
  • Salt
  • Parsley
  • Oil

Instructions

  1. Wash and cut your potatoes into wedges make sure to leave the skin.
  2. In a pot of boiling water, add your potatoes and let it cook on medium heat until fork goes through, but doesn’t break the potato.
  3. Once the potatoes are cooked, drain and set aside to dry, I used a clean dish cloth.
  4. Once your potatoes are dry, add them into a bowl.
  5. Now it is time for seasoning, add your garlic powder, salt, parsley, and oil just enough to cover all the potatoes. The amount of each is really to your taste. I added a little at a time and mixed and tried it as I went.
  6. Preheat your oven to 375. Add your potatoes on a baking sheet make sure they do not touch and cook until golden brown. About 20-25 minutes. Your potatoes are already cooked so it is just to get them crispy and golden brown.
  7. If you like parmesan cheese, the last five minutes, you can add some Parmesan cheese on top and let cook.
  8. If you like your potatoes more crispy, you can cook on broil for an additional 5 minutes, or until desired crispiness. Don’t leave them too long or they will burn.

I served this side dish with a simple grilled chicken breast and the results were a success. Added to our family menu.
