After searching for different side dishes I decided that it was time to make my own version of potato wedges, and the recipe turned out great. Simple, fast and delicious.

Ingredients
- 4 to 5 potatoes
- Garlic powder
- Salt
- Parsley
- Oil
Instructions
- Wash and cut your potatoes into wedges make sure to leave the skin.
- In a pot of boiling water, add your potatoes and let it cook on medium heat until fork goes through, but doesn’t break the potato.
- Once the potatoes are cooked, drain and set aside to dry, I used a clean dish cloth.
- Once your potatoes are dry, add them into a bowl.
- Now it is time for seasoning, add your garlic powder, salt, parsley, and oil just enough to cover all the potatoes. The amount of each is really to your taste. I added a little at a time and mixed and tried it as I went.
- Preheat your oven to 375. Add your potatoes on a baking sheet make sure they do not touch and cook until golden brown. About 20-25 minutes. Your potatoes are already cooked so it is just to get them crispy and golden brown.
- If you like parmesan cheese, the last five minutes, you can add some Parmesan cheese on top and let cook.
- If you like your potatoes more crispy, you can cook on broil for an additional 5 minutes, or until desired crispiness. Don’t leave them too long or they will burn.
I served this side dish with a simple grilled chicken breast and the results were a success. Added to our family menu.
