Sicilian Sausage Bread (Bignolati) is a famous fast snack I prepare for everyone. It is also quite filling. All you need is Pizza Dough (you can use my recipe here, or any recipe you enjoy) your favorite sausage and olives. When I am pressed for time sometimes I buy my dough. The best part about bignolati is that you can stuffed them with whatever you like. The traditional bignolati is sausage and black olives but you can easily add green olives instead. You can also (which i highly recommend) is making a pizza version with pepperoni, cheese and sauce (you just have to cook it less) My kids LOVE IT!
If you are using my dough recipe, you will make about 15-20 rolls per dough, depending on the size you cut them. I also use bigger baking trays (the ones my Nonna used to have) they are the best! You can buy on amazon here is the LINK
I really like using the bigger trays because it makes LESS DISHES and we all know how much I LOVE doing dishes 😉 So, below I have written out the traditional recipe again you can substitute it with your favorite ingredients.

Ingredients
- 1 Dough
- 4-5 sausages
- 1 jar of olives (black or green)
- olive oil
Instructions
- Take your dough out the morning or night before and place it in the oven with the light on covered with a cloth to let it rise.
- Once your dough has risen, place on a counter top or table (add flour so it doesn’t stick) Roll out your dough (not to thin) into a rectangle as best as you can.
- Drizzle with olive oil and spread all around the top of the dough.
- Take your sausages, remove the skin and squish the sausage in pieces into the dough (try to put a good amount everywhere.
- Open your can of olives, remove the water and dump the can over the dough and spread out the olives evenly all over the dough.
- Pre-heat your oven to 375 degrees and prepare your baking sheet by adding a touch of oil and using scott towel to spread it all over.
- Roll the dough like a snake.
- Twist the dough one end left and one end right.
- Cut slices about 1-1.5 inches thick.
- Place your slices on your baking sheet. (make sure the edge doesn’t pop out)
- Bake at 375 degrees for 40-45 minutes.
