These are the perfect cookies to make an advance and freeze for any occasion. Incase you get that unexpected visitors they unfreeze so well and always taste fresh. Nut puff cookies, can be made with your favorite kind of nuts. So if prefer pecan, walnuts, pistachios or any other kind of nut, this is your go to cookie!

Ingredients

  • 1 cup of Nuts (whichever you prefer) I used Pecans
  • 1 cup of unsalted butter at room temperature
  • 1 cup of icing sugar
  • 2 teaspoons of vanilla extract
  • 2 cups of flour
  • 1/2 tsp of salt
  • 1 egg
  • To Roll the Cookies
  • 2 cups of icing sugar

Instructions

  1. Toast nuts in the oven. Do not make them burn.
  2. Once toasted leave cool for about 10 minutes then crush them into mini pieces.
  3. While the nuts are cooling start your batter.
  4. Mix together butter, egg and vanilla.
  5. Add in flour and icing sugar and salt
  6.  Add in crushed nuts.
  7. Mix well until all combined.
  8. Preheat your oven to 350 degrees, and prepare your baking sheet. I use a standard sheet with parchment paper.
  9. Prepare icing sugar in a bowl to roll your cookie dough balls.
  10. Using a small cookie scooper, scoop out your dough into a perfect ball. Use your hands if needed.
  11. Roll the dough ball into the icing sugar and place on your baking sheet.
  12. Bake for 18-22 minutes.
  13. Once they are done, let cool on a cooling rack.
  14. Top off with sifted icing sugar.
  15. Let cool before freezing.
  16. Makes about 30 cookie dough balls.

Notes

If the cookies are frozen take them out a least a few hours before serving. You will need to add some more sifted icing sugar on top.
